It's always great to have a batch of refried beans on hand. This staple of Mexican and Tex-Mex cuisine goes great as a side with grilled proteins and all the classic fixings, in a bowl as part of a taco salad, in tacos, burritos, and quesadillas... the possibilities are as they say, endless. The Best Baked Beans Ever

One of the key ingredients is bacon, so you know it's going to be good.

This Quick Southern-Style Baked Beans recipe is by Pam Anderson.

medium onion, cut into small dice

medium green pepper, cut into small dice

large cans (28 ounces each) pork and beans

distilled or cider vinegar

dry mustard or 2 tablespoons Dijon

  1. Adjust oven rack to lower-middle position and heat oven to 325 degrees.
  2. Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
  3. Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.
  4. Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
  5. Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Whoa, Nelly. I never knew baked beans could be this good. I never knew baked beans could be improved upon I never knew baked beans could be such a triumph, such a prayer, such a song.

But they can. I now know they can.

Pam Anderson&mdashand sometimes like to call her &ldquoPamanderson&rdquo just to conserve energy&mdashwhipped up some baked beans to go with her ribs and Caesar salad last week.

The beans? They were all that and a bag of doughnuts. And I live in one of the southern states. I know about baked beans.

I know about doughnuts, too. But that&rsquos another story for another time.

Start with eight slices of bacon. The thick stuff is great. The thick, peppered stuff is even better.

Cut the slices in half, then fry them on medium-low heat. You don&rsquot want to brown or crisp the bacon at all the point is only to render the fat and get the bacon pieces ready to bake up and turn brown in the oven.

Remove the bacon pieces once the fat is rendered, and in the name of all that is good and right, do NOT pour out the grease and clean the skillet! If you do, you&rsquoll regret it for the rest of your days.

Next, measure 3/4 cup of your favorite barbecue sauce.

And throw in 1/2 cup brown sugar.

Add 1/4 cup distilled white or apple cider vinegar.

Finally, add a couple of tablespoons Dijon mustard and mix the whole thing together.

Now. Back to the skillet. You can pour off a little of the excess grease, but leave some in there for good measure.

Put the skillet over medium heat, then throw in the onions and green peppers.

Stir &rsquoem around and cook &rsquoem for a few minutes, or until tender.

Then, pour in three cans of good ol&rsquo pork &lsquon beans. They&rsquore the best beans for making baked beans. Everyone who&rsquos anyone knows that!

TIPS & TRICKS to Make this Recipe: I used a sweet Italian green pepper. If you can´t find them in you area, no big deal. You can substitute it for a regular green bell pepper. This stew is typically served as a thick stew. If you want more of a soupy texture, add in double the amount of broth I added.

This homemade baked beans recipe is the only recipe you’ll ever need. While the beans aren’t “baked” they are slow cooked which is exactly what you do in the oven. The good news is you won’t need to soak the beans or anything, just a quick rinse and they go straight in the crockpot.

What I love about making them from scratch is that I control the ingredients. Sometimes I want the beans to be a little sweeter so I’ll add a tablespoon or two more of the brown sugar. Maybe I’m making them for a BBQ and I want them to have a bit more of a smoky flavor so I add in a half teaspoon or so of liquid smoke.

The options are endless but this recipe is the perfect jumping off point. This really is the best baked beans recipe!

Homemade baked beans are always a menu item essential to any BBQ or potluck. I have one recipe on this blog for baked beans and it’s my friend Heidi’s Famous Baked Beans.

They’re fabulous which is why I didn’t feel the need to ever look for another recipe. Everyone that makes them, loves them.

Heidi’s recipe however doesn’t have beef in it, so I feel like there’s also room for this recipe which has a whopping pound and a half of savory beef.

HOMEMADE BAKED BEANS

My sister has a trick where she just buys canned baked beans and puts them in a slow cooker like she made them herself! Guess what? I can tell for sure and I’m sure most people can tell that they aren’t homemade. Gigs up sis.

The sauce is a mixture of ketchup, brown sugar, Worcestershire, soy sauce, and spicy brown mustard.

The sauce blends beautifully in the oven, simmering away for 45 minutes. Add this to your Fourth of July menu!

Finally, if I had a dollar for every time someone asked me this question. Baked beans are probably the most requested side at any potluck.

HOW DO I TRANSPORT THIS DISH?

Ingredients

8 cups water (use chicken, beef, or vegetable broth for added flavor)

1 lb. smoked sausage, ground sausage (browned in pan), ham hocks or diced ham. Our favorite is to use a leftover hambone with some meat on it.

1 tsp chili powder (optional)

1 can diced tomatoes (15 oz.)

Optional: Hot sauce or crushed red pepper to taste

Cooking Directions

In a colander or sieve, rinse beans thoroughly. Sort and inspect for any unwanted debris and discard.

Drain and pour beans in a slow cooker with 8 cups of stock/water, onions, garlic, and meat or hambone. (Not tomato or lemon juice yet!). Use 9-10 cups of liquid if you like a more "brothy" soup.

Stir to combine. Set slow cooker on high and cook for 5-7 hours then check to make sure beans are tender. The soup can continue to simmer for several hours and will develop more flavor over time.

After the beans are tender, remove the hambone (leave any ham in the pot), stir in the can of diced tomatoes, our Ham Flavor packet, optional chili powder, and the lemon juice.

Cook for additional 30 minutes then keep warm until ready to serve.

We recommend to serve with a freshly baked slice of corn bread! You can also serve over rice as well.

Please keep in mind that every time the lid is opened, your cooking time will be longer.

For even more flavor, substitute beef, chicken or vegetable stock instead of water.

You can also try 1 lb. boneless chicken breasts or 1 lb. beef roast, then shred meat before Step 5 above.

As with all dry bean recipes, it's best to wait until AFTER the beans have become tender or fully cooked before adding any acidic ingredients like tomatoes, citrus, vinegars, etc.

You can add other vegetables like carrots & celery for even more flavor and nutrients

Remember that this is a NO SOAK recipe, but if you have already soaked the beans that's not a problem, just use 1 cup of water/stock less.

Variations on the recipe will work for almost all of Hurst's HamBeens items.

If you prefer a more "brothy" soup, add an extra cup of liquid when preparing

REFRIED BEAN DIP RECIPE

During my last pregnancy I had an overwhelming craving for bean dip. I wasn’t sure exactly what I was looking for but I was sure if I tasted enough bean dips I would find the right one to satisfy the craving.

This bean dip is pretty simple. Beans, salsa, cheese, cream cheese, sour cream, chili powder and cumin. It’s the ultimate combo and is seriously one of the best bean dips I’ve ever had.

But this, THIS is the dip. Couldn’t be anymore perfect. This is everything I ever wanted when I was pregnant…and not pregnant.
