Heat a medium-size skillet over medium heat.

While the skillet is heating, cut the jalapeno in half lengthwise. To keep things tame, remove the membranes and seeds, using a spoon to scrape them out. If you’d like the dip to be extra spicy, leave the seeds and membranes intact.

Dice the peppers and onion.

Add the butter to the skillet and let melt.

Stir in the peppers and onions and cook for 3-4 minutes or until softened. Reduce the heat to low and add the cream cheese. Stir until it starts to soften and melt.

Stir in the pepper jack cheese and continue stirring over low heat until it’s mostly melted.

Add the milk and stir until smooth and creamy.

While the cheese is melting, heat the spinach in the microwave according to package directions. Drain well.

Stir the spinach, pimentos, and salt into the melted cheese.

Serve with sliced bread, tortilla chips, or fresh vegetables.
