cup fresh parsley, finely chopped
tablespoon finely chopped fresh rosemary
tablespoon finely chopped fresh sage
tablespoon finely chopped fresh thyme
tablespoons butter, melted
teaspoon black pepper
In a small bowl, stir together chopped fresh herbs and all other ingredients. Rub mixture liberally on outside of turkey.
Place any remaining seasonings inside turkey cavity.
- One batch of this turkey seasoning makes about ½ of rub, enough for one medium-sized turkey.
- Fresh herbs will taste better, but if you do need to substitute for dried, here’s a simple conversion: 1 part fresh herbs is equal to 3 parts dried herbs. For example, if you need to use dried thyme instead of the 1 tablespoon of fresh thyme that this recipe calls for, you can use 1 teaspoon (also known as 1/3 of a tablespoon) of dried thyme instead.
