For starters, we will make marinade for meat. Mix in a bowl, soy sauce, pepper, a teaspoon of sesame oil. Mix the ingredients and put the diced pork in this marinade. Let it marinate for at least 30 minutes. Meanwhile, prepare

We prepare the wok for cooking the meat. Put 2-3 tablespoons of oil and when it heats up, add the diced pork, which we have previously mixed with 1 teaspoon of starch. Using the stir-fry method, fry the meat until golden brown. We take out the meat and put it aside.
Heat the wok again. Heat the garlic and ginger. Add the bell pepper and carrot and cook for 2-3 minutes, stirring constantly, then add the pineapple pieces, leave them on the fire for a while for the pineapple to leave its juice, then add the meat pieces and mix for another 1-2 minutes. , enough to reheat the meat.
Pre-prepared sweet and sour sauce and the rest of the sesame oil, put them in the wok and leave them on the fire for about 3 minutes. Serve with plain rice.

Method of preparation:

One of the secrets used by Chinese chefs is to preheat the wok before adding oil.. When the oil is added, it is poured in a circle to reach as large a perimeter of the vessel as possible. Another important tip is that then when we start cooking we have everything washed, cleaned, cut and put at hand. You can't stop cooking to chop onions or grate some ginger. 2 young green onions (not too thick)

Shortly before removing the meat from the cold, cut the vegetables, pineapple into strips, chop the onion, grate the ginger, grind the garlic and prepare the sauce, in which we will add the rest of the marinade.
Remove the meat, drain it (2 tablespoons of this drained marinade will be put over the sauce that will be put towards the end of the recipe), put the starch over it and mix so that it is as well covered as possible. Preheat the wok, pour the circular oil and when it is hot (it will not take long if the dish is hot), put the meat and fry it over medium heat for about 2 minutes.
After this interval, remove the meat and put the vegetables in the same oil for 1 minute, add the ginger and garlic and cook for another 30-45 seconds.
Put the meat over the vegetables, add the pineapple, season with pepper flakes to taste, then pour 150 ml of water.
Put the lid on and let it cook for 3 minutes. After this interval we take the lid, pour the sauce containing pineapple juice and starch and leave the wok without the lid. Stir from time to time so as not to miss.
We stop the fire when the sauce gains consistency. We eat immediately with a garnish of steamed rice, rice with vegetables or plain fried rice.
Sweet and sour pork
A well-known and appreciated combination that I urge you to try in another version. The sweet and sour pork recipe that I cooked has a note of freshness given by the green cucumber, it is delicious and easy to prepare.
For the preparation you need the following ingredients: 400 g boneless pork leg, cut into thin strips 1 medium onion, cut julienne 3 cloves garlic, cut into thin slices 350 g diced pineapple 200 ml pineapple juice 150 g green cucumber, cut into thin slices 50 g red bell pepper, chopped thin strips 1 tablespoon sauce over 2 tablespoons brown sugar 1/4 teaspoon dried hot pepper, mashed 1 tablespoon cornstarch green part from 1 sprig of green onion, finely chopped 1 tablespoon peanut oil.
Preparation of sweet and sour pork: Put the oil in a deeper pan and, when it has heated up, add the onion and garlic.
Cook for 1-2 minutes over medium to high heat, stirring frequently, until the onion becomes translucent and the garlic slices turn golden on the edges.
Add the pork and continue to cook for another 4-5 minutes, stirring frequently.
Once the meat strips have separated and changed color, add the sugar, hot pepper and cook for approx. 30 seconds, stirring constantly, so that the sugar melts, then add the fish sauce.
Add the bell pepper and green cucumber to the pan and cook for 2-3 minutes, stirring occasionally, until the water left by the vegetables evaporates.
Continue by adding the pineapple, green onions, stir and leave for 30 seconds.
Meanwhile, dissolve the starch in the pineapple juice, then pour it into the pan.
Stir, bring back to the boil and, as soon as the sauce begins to take on consistency, you can turn off the heat. The sweet and sour pork food is ready to be put on plates and served with a garnish of rice.

The pieces of meat are passed through flour and fried in hot oil.
Brown on both sides, then wipe with paper towels to remove excess oil.
