In a bowl put all the ingredients (except the beef sheets!) And mix well. Without tempering or boiling anything beforehand. Of course, the exception is if we use green beef, which must be boiled first (I guess, I never tried).
Then we form the sarmalutes and put them in a pot that already has a few sheets of beef on the bottom of the pot. Before putting them to boil, put a tablespoon of concentrated tomato sauce, salt, a little olive oil and enough water to boil, adding if necessary from time to time. Let it boil for about 1 hour and a half on low heat with the lid covered. From time to time we move the pot so that it doesn't get caught.
According to taste, we can add at the end, a little squeezed lemon.
